If I'm on vacation I know that my cities cannot be attacked but does this also apply to mercenary camps and revolts? If it does not and I take out a subscription to prevent revolts while I'm away can I cancel it easily when I return?

no, revolts still happen. Its technicality not a campaign, its a event.
Indeed, once activated, the button you just clicked turns into the cancel button if you wish to stop the protection; its a simple click to activate/deactivate. If you are a gold account, you get 5 locations protected free of charge!

Sorry, I never clarified this for you. they can not attack your camp while in vacation mode.
